The Fly Creek Cider Mill & Orchard will hold its annual CiderFest on October 8 & 9 from 10:00 until 4:00. The weekend features the Mill doing what it does best, making fresh, sweet cider the old-fashioned way on its 1889 water-powered cider press. Pressing demonstrations will be performed by Chris Molloy.
I will show visitors how we still make cider as it was produced back in 1889. Our water-turbine is used to power the traditional rack-and-cloth press method for making our famous sweet cider, says Chris.
Outside the Mill the CiderFest offers demonstrations of its large collection of hand-operated presses dating back to the mid-1850s. These presses once were a necessity on every farm before commercial mills like the Fly Creek Cider Mill were established. The hand presses allowed the pioneering farmers to make cider that was fermented for later consumption or turned into vinegar for preserving the vegetable harvest by pickling. Families are encouraged to participate in operating the presses for the fun of it.
Returning this year is the International Society of Apple Parer Enthusiasts (IAPES) who will display apple peeling equipment ranging from home peelers to commercial slicers. The Mills present day founder, Charlie Michaels will lead the IAPES team by showing his collection of over 100 peelers, restored commercial slicers and a Telegraph hand operated cider press.
Inside the Mill visitors may sample fresh apples, cider, and more than 40 different specialty foods including extra-sharp cheddar cheese, sweet butter-cream fudge, apple and corn salsas plus many wines and hard ciders from the Mills Farm Winery.
Sunday will feature a performance by lyricist and impressionist, Ody B. Goldy, who will entertain visitors with his humorous tributes to well-known performers. Name the song and writer and win some fresh cider. There is no admission charge and parking is free.
The Fly Creek Cider Mill is located just three miles from the Village of Cooperstown and is open everyday 9:00 until 6:00. For more information on this and other events at the Fly Creek Cider Mill visit their website at http://www.flycreekcidermill.com.

What started as a need to preserve his own growing wine collection, Mark Nelsons company Classic Wine Storage & Services is now celebrating five successful years of providing premium service to wine collectors and investors of every level. This includes a re-branding of the company image, an additional location and expansion of available service offerings.
According to Wine Market Council’s 2010 Consumer Tracking Study, the U.S. wine market continues to grow. Despite the U.S. economic downturn and slow recovery, interest in wine and wine amenities has steadily increased for the past 17 years.
“We have seen the increase in this trend first-hand through the demand of our services to collectors and investors,” said Mr. Nelson. “However, we also have seen a growing wine storage need for new collectors and owners of condos or smaller homes where space is at a premium but still want the facilities to store their wine under optimum conditions.”
Classic Wine Storage & Services is opening its newest location in Dallas near the Galleria Dallas Shopping Center. The 10,343 square foot location is being extensively renovated to accommodate the increase in demand for walk-in lockers, larger case lockers, along with custom racked solutions. This new Dallas location will be a state-of-the-art facility dedicated to wine storage with advanced refrigeration, backup power generator, video security, private lockers and an event room with internet access.
In the past five years, the company has grown to include additional services such as wine insurance, in-home cellar management, cellar valuation, and refrigerated transportation capabilities. Classic is a TABC Bonded Warehouse and will service commercial accounts from both the Dallas and Southlake locations.
Ultimately our success is based on our focus of ensuring that the process of transporting, preserving, and storing wine is as simple as enjoying them, said Nelson. I wanted the companys new look and website (http://www.classicwinestorage.com) to reflect the philosophy of focusing on simplicity as we continue to expand.
To reserve a locker in the new location or to find out about other wine-related services, contact Mark at 817-442-0348.

Who would imagine that one of San Franciscos best Italian restaurants would be the source for a perfectly cooked, stress-free holiday turkey recipeserved with divinely inspired bourbon-gin gravy that would have had Julia Childs raising a toast or two?
Each year, loyal customers of Palio DAsti (http://www.paliodasti.com) flock to the downtown dining destination on Thanksgiving Day to partake of Chef Dan Scherotters family-style three-course feast, which includes multiple appetizers, seven side dishes like Nonna used to make, a trio of pies, organic chocolates, and of course entrees, including his incredibly succulent and flavorful turkey.
For those who come to dine at the Michelin-recognized comfortable dining restaurant, the cost is $ 59 per person and kids under 10 pay their age. But for those who prefer to try their hand at a home-cooked version, a little cooking skill and the ability to follow a recipe is all thats needed.
If youve ever eaten turkey, youre probably familiar with uneven cooking syndrome: if the breasts are juicy, the legs and thighs arent done, and if the dark meat is done, the white meat is cardboard. If that isnt bad enough, roasting the whole bird doesnt give you what you need for the most important part: the gravy, said Chef Dan.
So what I do is braise the legs, thighs and wingslike osso bucountil the meat is falling-off-the-bone tender. This part can be done up to 23 days beforehand, which is a big stress reliever. Separately, on the Big Day I roast the breasts off the bonelike prime ribuntil its medium and still juicy. The whole recipe requires a little more effort, but it saves a lot of time, guesswork and fiddling at the last minute.
